This recipe will keep your blood sugar stable, and is delightfully crunchy. It's one of our all time favourite breakfasts! Oats are hard on many tummies but this recipe doesn’t need them. Enjoy with runny cream or yoghurt –so indulgent!
1 1⁄2 cups raw macadamia or Brazil nuts
1⁄2 cup each of raw almonds & raw cashews 1⁄2 cup sunflower seeds
2 egg whites
2 teaspoons cinnamon
1 teaspoon ground cardamom
2 teaspoons vanilla extract
1⁄2 cup Natvia
1⁄2 cup chia seeds
1⁄2 teaspoon salt
1⁄2 cup shredded coconut, unsweetened
1⁄2 cup goji berries
Preheat oven to 130. Blend nuts in the food processor for 30 sec. Place egg whites into a large bowl and beat with a hand mixer until soft peaks form. Add the cinnamon, cardamom, vanilla, salt, chia and Natvia, and fold to combine until evenly distributed. Pour the nuts into the bowl and fold together until the whites are gone and the mixture is a little sticky. Adjust sweetness, salt or spice as necessary. Place mixture onto a large baking tray and bake for 30-45 minutes, stirring often. Allow to cool and add coconut and goji berries. Enjoy!
