This flavoursome soup cost around $10 for the whole pot and is a fantastic way to get your child's vege quota in! I served mine with yoghurt, but it would be delicious with sour cream or runny cream too!
- 1/2 onion, diced
- 1 stalk celery, diced
- 1 clove garlic, smashed
- 1 carrot, diced
- 1-2 zucchini, diced
- 1/2 capsicum (any colour), diced
- 600 - 700 grams tomatoes, diced
- can also add broccoli or other vegetables as desired
In a saucepan or pot over a medium-high heat, melt 2 Tablespoons of butter or coconut oil. Sauté onion, celery, garlic and carrot until soft. Add 1-2 teaspoons of salt, and add zucchini, capsicum and other vegetables if using. Fry for another 5 minutes. Add tomatoes and turn the heat to medium. Allow to cook down for at least 20 minutes, adding boiling water to the pan if necessary. Turn off the hear and allow to cool for 5 minutes. Blend until smooth, and serve with yoghurt, cream or sour cream. Top with fresh parsley and enjoy.
