The process starts with heat-damaged, rancid and very cheap vegetable oil. This oil is heated to extremely high temperatures, pressure is applied, and hydrogen is forced into the oil molecule to produce a solid. To produce this change, toxic chemicals (e.g. nickel) are used. The result is a smelly grey substance, which needs to be deodorised and bleached using chemicals to make it white. Then, artificial flavours and flavours are added to make it look and taste like butter.
The processing of margarine creates an unnatural molecule that doesn't occur anywhere in nature. These man-made trans fats disrupt our bodies, because they cannot be recognised as food.
Margarine is actually full of trans fats, free radicals, synthetic vitamins, emulsifiers, preservatives, solvents, bleach and sterols. They don't need to be listed on the label because they're part of the manufacturing process, not an ingredient.
Margarine and the toxic oils it contains increases the risk of heart disease. It also contributes to cancer, bone issues, hormonal problems, skin disease, infertility, pregnancy & breastfeeding problems, growth problems, learning disabilities, and weight gain.
Phew! Why would you ever want to put that in your body?
Now, I'm going to give you 3 reasons why butter is better:
1. Butter isn't stored as fat
Butter contains short and medium-chain fatty acids, which are used for instant energy - not to be stored as fat. It also contains nutrients essential for fertility. Butter protects against cancer, arthritis, osteoporosis and thyroid disease. It aids digestion and helps children's development.
2. Butter is full of vitamins
Butter is full of vitamins A, D, K2 and E. These all help to protect against free radical damage, and work as antioxidants. K2 is only available from pasture-fed dairy products, and helps the body to absorb the nutrients in our food.
3. Butter does not cause heart disease
Butter does not raise cholesterol; margarine does! We used to eat lots of butter, and hardly any vegetable oils. Yet heart disease, obesity and cancer were rare. Today, the use of vegetable oil has increased hundred-fold, and disease rates have soared with it.
You can literally eat all the butter you like and not gain weight from it.
Sugar and grains make us gain weight, not fat! (But that's a blog post for another day :) )
